Gluten-Free Banana Bread

Ingredients:

  • 1 ¾ cups of Gerti’s Gluten-Free Flour
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ cup butter (melted)
  • ¾ cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 4 ripe bananas (mashed)
  • ½ cup gluten-free chocolate chips or chopped nuts (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. In a bowl, combine Gerti’s Gluten-Free Flour, baking soda, and salt.
  3. In another large bowl, whisk together the melted butter and brown sugar.
  4. Add the eggs, vanilla extract, and mashed bananas to the butter mixture, stirring until smooth.
  5. Gradually fold the dry ingredients into the wet mixture until just combined. If using, stir in the gluten-free chocolate chips or chopped nuts.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 60-65 minutes or until a toothpick inserted into the center comes out clean.
  8. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
