Cranberry Quick Bread

3 Cups Gerti's flour

1 Cup Sugar

1 Tbl. Baking Powder

1/2 tsp. Salt

1/4 tsp. Baking Soda

2 tsp Gratted Orange peel (fresh is best but jar is fine)

1 Cup Cranberries, chopped (somewhat frozen works best)

1 Egg room temp, beaten

1 Cup Milk

2/3 Cup Buttermilk

1/4 Cup vegetable oil

3/4 Cup Chopped nut of choice (optional) 


Preheat oven to 350 degrees

Grease 9x5x3-inch loaf pan or use parchment paper. 

In a large bowl mix together Cranberries, GF flour, sugar, baking powder, salt, orange peel, and baking soda. Set aside.

In a medium bowl, mix egg, milk, buttermilk, and oil. Add wet ingredients to dry, mix until mostly combined. Add nuts if using. Pour batter into prepared pan.   

Bake for 1 to 1 1/4 hours OR until butterknife inserted near center comes out clean. Remove loaf from pan and cool completely on wire rack.
